Payments
Split it any way the table wants.

Offline
The internet drops. Service doesn't.
The till saves every action on the iPad before it goes anywhere else. Lose Wi-Fi and staff keep taking orders, firing tickets and taking cash. When the connection returns, the queue replays in the order things happened.
